What are the Washington food safety regulations?

Washington State’s Retail Food Code aligns with the FDA’s food code and requires that the person-in-charge demonstrate their knowledge of three specific things: 

  • Food foodborne disease prevention 
  • Application of the hazard analysis and critical control point principles 
  • The requirements listed in the code 

And you can meet this requirement by being a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program.

Who should get their food manager certification?

It’s recommended that the permit holder be the person in charge, but they can also designate someone else as the person in charge. No matter who it is, there must always be a person in charge at the food establishment while it’s in operation. 

To put it simply, anyone can get their food manager certification. In most cases though, it’s usually the owner, food service manager, executive chef, or operations manager. 

How long is the food manager certification good for?

The Washington State Food Code doesn’t specify exact renewal requirements. But the ANSI CFPM certification is valid for a maximum of five years. To renew the certification, you need to pass the Food Protection Manager certification exam again.
